The Port O’Connor Elementary Kindergarten class had a wonderful lunch on Friday in the classroom and cooked vegetables they picked from their garden. With the help of Renee Hawes and Brenda Smith, students steamed carrots, grilled new potatoes with onions, sauteed green beans and squash. They dipped fresh cucumbers and squash in Ranch Dressing and Tommy Smith brought some chicken fajitas to go with the vegetables from the garden.

Everyone tried a little bit of everything and most students said they enjoyed all of the food. It must have something to do with the fact that they have worked so hard in the garden to get the vegetables to grow. Even though we have already had the big meal, we will continue to visit the garden. Soon the tomatoes will be ready and we will make a cucumber and tomato salad in the classroom.

The students and I would like to thank Tommy and Brenda Smith for sharing their garden with us. Thanks to Mr. Clarence Albrecht for his many years of experience and knowledge. Also, thank you to Tom and Pat Eckstrom for sharing their green beans and new potatoes with us because ours are not quite ready yet. It is so nice to know that the community is so very supportive of Port O’Connor Elementary and its’ students.
