As January is a time for many organizations to rest after the Christmas Holidaze, February becomes the time that they then take stock of their future aims, and March is when the fun begins. And so, hopefully, this column now will reflect that.

Our March Bunco Get-Together was held March 4th in the Back Room of the Community Center with hostesses Sally Jones and Biddie Hileman once again providing yummy snacks and a plentiful of shamrocks for that evening. Judy Overton and Kelly Gee-Cooper will hostess the next meeting on April 1. REALLY, not just April Fool!! For further information regarding this fun group, call Shirley Gordon at the Library, 983-4365.

An exhausted but happy President of the Lions Club, Joyce Jordan with her husband finally took a break late Saturday afternoon following the wrap-up of the Second Arts and Crafts Festival. Staged on March 8th the Community Center was full of various vendors and more had booths outside. A number of residents and others from out of town showed up to shop and left very pleased with their purchases. Definite plans are in the works for the 3rd Annual Lions Club Arts & Crafts Festival for 2015.

And April 5 is the Spring Garage and Bake Sale as staged by the women of the POC Service Club. Donations are still accepted at the County Barn; call Peggy Elliott, Chairman, 983-2165 or her assistant, Kay Middleton, 983-2257 for information re delivery of items. But don’t forget that during that Garage Sale, is that fabulous Bake Sale that starts at 8:00 a.m.; be sure to get in line early for a sumptuous dessert!

April 25th marks the Friends of the Library Spaghetti Dinner at the Community Center. This will be the first fund raising activity of the year; all residents are invited to come and enjoy a luscious Italian Pasta dinner. Being served will be a choice of a hearty meat sauce or a vegetarian sauce on lightly seasoned pasta al dente and a crispy green salad with Italian Garden vinaigrette and crunchy rolls. Dessert to follow with a choice of beverages. After the serving of food a program is planned to introduce members of the Friends of the Library and other important guests. Then a video will be played featuring plans for our Library. Donations will be happily accepted, and all funds will go into the building fund for our Library.

Wish I could have been here to enter my purple-people-eater golf cart in Hoop’s St. Pat’s Parade on the 15th. Understand it was a success and lots of people turned out on the route to watch those stunningly decorated mobile carts travel down the street.

Spring arrived on March 16th and with it arrives many of our weekenders for fishing our waters. If you’ve been lucky enough to catch a red or a flounder, a Piccata makes an excellent way to cook it. Very easy and served with Angel Hair pasta and a romaine salad with a tasty vinaigrette. And I’ve found that using Panko bread crumbs on the fish after an egg wash with seasoned flour really makes a difference. Also adding not just salt & pepper but Mexican Oregano to the flour gives a slightly more emphatic taste to the fish. Following sauteing the fish in olive oil, after removal from the pan, deglaze the pan with white wine; then add juice from 2 lemons and butter; bring to almost a bubble then pour over the filets on the paste. And do try an Indio beer from Speedy!
