Josie’s Mexican Food – 1983

Once upon a time, two young kids (Cookie and Josie) met, fell in love and had four daughters by the time they were 21 years old. Eight years later they had one last child, another daughter. After many years of Gulf shrimping and oystering, the man of the house decided, with his wife who tended to their home, daughters and babysat, they would open a little taco hut. So with $250, a little building from a dear friend and their family’s support, they started selling breakfast tacos. They did pretty good, so went on to make a full menu. Still doing good, they bought an old house, fixed it up, and to the day, one year later, started serving up freshly cooked Mexican food, at a new location and had people waiting outside for a table to become available. A year later, they added a room. Blessed by the good Lord, and having the same problem, two years later they added another room. The rest is history.
