George the Squirrel

Animals and man have always had a deep connection that manifests itself in a variety of ways. From the simple comfort of the dog at your feet, to the farm animals we depend on to survive, animals and Humans share a symbiotic relationship.

The original settlers of the circulation area of this newspaper, the group of Native American tribes known as the Karankawa, depended on the rich animal resources of the area and it’s waters to forge a life only cut short due to disease and European settlers.

But what about the modern, more urban settings that are the hubs of Human population? What about the animals that are forced to live ‘off the land’ in a land that is no longer entirely theirs?

George the Squirrel is the average Illinois squirrel. He is gray, has a bushy tale and is as cute as anything created by a man named Disney. What makes George unique is in his manner in dealing with Humans that live beneath his trees.

Most squirrels will run from the Humans like a mouse in your kitchen, scampering up trees with ease and circling the base of the trunk to keep an eye or two on you, just in case you might have them in mind for dinner.

George however, has other ideas about his Human neighbors. He would rather come and sit with the residents of the apartment complex near his home, begging for cookies (his favorites seem to be chocolate and on a more healthy note, oatmeal raisin) and being entertainment for the Humans as well.

One day I recently had the chance to sit with George for awhile, and he danced around the concrete patio as if we were of the same species, chasing each other in the Spring air. George allowed himself to be petted a bit, and having never seen a wild squirrel so tame I was surprised by how naturally the little fellow enjoyed being scratched and rubbed.

As sitting spots go, he always liked to be at your feet, little paws on the toes of your shoes.

He even allowed me to get a couple good looks at him with the camera, hence the accompanying photo.

George has been back many times, taking his cookies and the leftover ends of loaves of bread, sharing the latter with the birds who populate the apartment building’s shrubs and trees.

Always being one for sitting outside if possible when the weather is nice, I have had the chance to see George many times and he never seems to lose his friendly nature, although he is very aware of Rain, the resident cat. He is a little bigger then this photo shows as well, as he has gotten older in the way that all things on Earth seem to do when mixed with time.

Spring will eventually turn to Summer and then Fall in the same patient manner and although I cannot be sure how long George will continue to make his presence known. I do know he has made a positive impact on my life. George is one of those little moments that make the best memories and the best stories to tell.

Long live George the Squirrel.

Beautification Volunteer

Sonny Mullins of Seadrift has been volunteering his time at the14th Street area of the Seadrift bayfront for more than a month. A once undeveloped area of the park that was washed out and full of weeds, trash and driftwood is now clean and weed free. Sonny, along with several other bayfront residents, has supplied materials and labor for the new, beautiful walk bridge, This is a popular area for walkers and joggers.Sonny says he doesn’t mind volunteering his time as he enjoys the fresh air and keeping busy.

50th Wedding Anniversary

Joey and Sandra Lane

Port O’Connor residents Joey and Sandra Strempel Lane celebrate their 50th Wedding Anniversary May 19, 2013.

They are blessed with sons Randy and daughter-in-law Jane Lane, and Troy and daughter-in-law Dawn Lane. They have three granddaughters, Jessica, Cassie, and Savannah Lane, who are the sunshine of their blessed years.

Sandra and Joey were married in Victoria, Texas at Trinity Lutheran Church.

They love to travel, play cards, history (especially Civil War era), San Antonio Spurs, beachcombing, and reminiscing with family and friends about the good old days. Joey retired from Brown and Root and Sandra retired from CCISD. They are now enjoying life to the fullest and each day is a new adventure.

Bacon Wrapped Stuffed Shrimp

(Serves 4) Ingredients:

12 Large Shrimp peeled & deveined, leaving the tail on slightly butterflied
6 Jalapeno Peppers rinsed, halved and seeded
1 Purple onion cut into ½” wedges
½ lb. Monterey Jack cheese, cut into 1//2 “ wide x 1/8” thick ”x  2” long strips
12 slices of bacon- center cut and  thin sliced

Baste:

1 T. Butter
2 T. Lemon juice
3 T. TXG Jalapeno Kiwi Jelly*
1/2 T. Dried basil leaves (or 2-3 fresh basil leaves chopped fine)
1/2 T. Black pepper
1 Clove of fresh garlic minced
1/3 cup white wine (chardonnay)

Heat above ingredients in a sauce pan, bringing to a boil. Lower heat, stir well. Remove from heat after 5 minutes.

Cooking instructions:

Place a slice of cheese into a jalapeno half, then place the onion wedge on top of the cheese then place the shrimp on top. While holding carefully, wrap with a slice of bacon to cover, leaving the shrimp tail exposed. Toothpick closed to seal.

Grilling instructions:

Grill indirectly over medium to medium high heat on mesquite/charcoal or gas grill. Be sure and brush with the basting sauce every time you turn the shrimp, but keep covered until turning to keep the temperature up. Grill until bacon is browned. Do not over cook. Maximum grilling time 10-12 minutes. Serve with Pineapple & Mango Pico de Gallo.

Pineapple & Mango Pico de Gallo

Ingredients:

1 Cup fresh diced pineapple
1 Cup peeled, pitted & fresh diced mango
1 Cup Fresh chopped cucumber
1 Cup Yellow bell pepper diced
1/2 Cup fresh serrano pepper (seeded & sliced thin)
1 Cup green onions sliced thin
1 Red bell pepper (diced)
1/2 Cup fresh squeezed lime juice
2 T. Honey
2 T. Texas Gourmet Mandarin Orange Serrano Jelly*
2 t. White pepper
1 T. Salt
1 Cup fresh chopped cilantro

Whisk together honey, lime juice, mandarin orange serrano jelly, pepper, salt and cilantro. Combine and stir together all the ingredients. Cover and chill at least 1 hour. Serve Chilled.
